Simple Shrimp Scampi Recipe

I don't eat a lot of seafood, but one that I know I enjoy from time to time...along with many other people is shrimp!! In fact, I have a terrific shrimp recipe that I'm sure many people would enjoy trying. It's a simple shrimp scampi recipe that is easy to prepare and make. With the busyness of life it's nice to know that there are still great tasting recipes that anyone can make. My simple recipe is as follows:

Ingredients:
About a pound of large unpeeled fresh shrimp
2 cloves of garlic...mince them
1/2 stick of butter, melted
1/4 cup of oil
Parsley...to your liking (optional)
Pasta of your choice

Directions:
You can sautee the garlic in the oil for a couple of minutes. Next you'll add the butter and shrimp. Once the shrimp are a little pink....turn down the heat and let cook fully. If so desired you can sprinkle with parsley and then serve over your choice of pasta or rice. Enjoy!!

I don't recall where I got the exact recipe, but I'm sure I've made some alterations to the ingredients to suit my liking. As many people who cook know...the best part about a recipe is that it can be changed up to suit your taste and style. I'd love to hear of some of your favorite simple domestic seafood recipes!

Basement Transformation

Our basement is really coming together. We have little minor things that still need to be done....but what a difference carpet and paint makes! Wow. For those who don't know what we've all done....our basement was partially finished, but not very usable. Not for us anyways. We decided to take down a wall...build a wall...carpet...and paint. In the end we now have a bedroom, playroom and family room out of the project. It's been fun watching the transformation. Here's a quick peek at what it looked like when we first started our remodel and what it looked like towards the end....






Baby Signing


Kaelyn absolutely loves watching her Baby Signing Time video. All I have to do is start singing the song from it and she turns right towards the television or gets a big smile on her face and starts clapping her hands. When we first got this dvd as a baby gift I wasn't sure how much we'd use it or how much she'd like it. However, as she gets older I would say it's her favorite thing to watch. It's teaching her things too....she now signs more! It's too cute!! (in the picture included in this post, I couldn't even get Kaelyn to look away from the tv to take a pic...she was watching them sign "dog") :)

Nasty Weather

Wow, there sure was a bad storm that went through the area this morning!! I didn't even know that it was supposed to rain!! All of a sudden the sky got dark and I hear thunder roaring. The next thing I knew, the swing in the backyard was tipped over by the high winds and we lost cell phone service. I guess it was pretty bad all over the area. In a near by town there was even a plane that went down that killed 7 people. It's definitely not a day to be outside, that's for sure!

Growing Girl

Kaelyn sure has been on the move lately. As she gets better at pulling herself up and standing along furniture, we're also finding that she's walking along things more easily as well. It's fun to see, but sometimes scary....as she's quite brave when doing it. For instance, the other day we were getting her ready for a bath...and the next thing we knew she was standing up next to the tub. Obviously with tile floors this is a bit scary. It goes to show that we have to watch her every second. It sure is fun to see her learning new things though...what a big girl!

Fair 2008

Scott and I have only lived here for a little over a year. We're still learning all the fun things our town has to offer. This summer we've learned how fun, yet busy this time of year can be with the fair going on. It works out well for us though, because we live close enough to the fair grounds that we can actually walk over and enjoy all that they have to offer. We thought it would be fun to check it out the other night with Kaelyn, and I'm really glad we did. Kaelyn loved seeing all the little animals. It goes on all week/weekend...so who knows...maybe we'll check it out again sometime?!

I don't know about you, but one of thing that's even more frustrating than waiting in the waiting room at the doctor's office, is waiting in the room while your doctor steps out for information on your prescription or health care coverage. Lunch Time

It's 2:30 and this is the first time I've even had time to think about lunch! I suppose I better go find something before Kaelyn wakes up from her nap soon. Then I won't get lunch at all. It's funny how quickly the days go by...so fast in fact that sometimes I forget to even get lunch for myself! Oh well...that's how it goes some days I guess. Now it's just a question of what to have...hopefully there is something in the cupboards?!

Basement Coming Along

Well...I'm happy to say that the basement is coming along very nicely. Right now we're working on finishing the painting, then the carpet comes Friday...then we can finally move all of our furniture back in!! YEAH!! We've had a few bumps in the road, but by the end of the weekend, we're hoping to have it pretty well put together and finished. It went from being about a month long project, to a two month project...but it's SO worth it!! I can't wait to have it finished. I'll definitely have to take pictures and post them on here!!

Our Home

I don't know if the housing market is picking up or not...but it seems some of the homes in our area are selling pretty quickly now...even homes that have been on the market for a long time. It got me think mortgage lenders, but once we were able to one that worked for us we were on board. Our housing process actually went very smoothly. I hope it's beginning to go that way for other people in search for homes.

Fun Parade

It was a nice day today. We headed back home to see the parade with my parents, and Kaelyn loved it! She sat on Grammy and Grampa's laps the whole time and just loved watching the floats go by. She was even clapping for them...so cute! We decided that this is a parade that we'd like to take her to every year. We like the smaller town parades....it was a lot of fun!

Recently I was just telling my husband how badly I need to go see the eye doctor. I was also expressing my frustrationn with my glasses and how I should really be looking into getting some new ones. Is It The Weekend Yet?

It's only Thursday and I am already looking forward to the weekend. Saturday we get to take Kaelyn to another parade with my parents. I think she'll really enjoy it. Then Sunday my brother and Scott are going to go golfing with my dad for his birthday. This is a hobby that they all have in common...so it should be a lot of fun for them. Me, Mom and Kaelyn will all relax and enjoy our time together while they're out playing. Should be a fun weekend.

Neat TV Show

Scott and I like watching home shows about remodeling and things like that. The other night as we were watching our favorite channel, we watched a story about a family who was seeking foreclosure help. It saddens me that so many people are in this situation. I'm glad that this television show was able to help them out by giving them a nice place to live. They so appreciated it!! These are the kinds of shows that I really enjoy watching!

Fun outting

Kaelyn and I always enjoy getting out and doing something during the day. Today we decided to go down and meet my dad for lunch for his birthday!! We had a great time. I'm glad it worked out that he could meet with us. It's nice being home and able to do things like that every once in a while. Kaelyn had fun seeing Grampa too!! Hopefully he has a nice rest of his birthday. He deserves it!

First Trip To The Pool and To The Zoo!

We had a great time this past weekend. I wish more weekends were as relaxing and laid back as that one!! We were able to take Kaelyn to the pool for the first time. The water was a bit cold, but as she got used to, she enjoyed playing! She just hung out in the zero entrance part and crawled around. She also enjoyed watching the other kids there as well!

We also got the chance to take her to a zoo not far from where we live! She loved that too!! She enjoyed watching all the animals...especially ones that she could see up close like the fish in the tanks. She did so well. We'll definitely be taking her back someday soon!!

Reading To Your Baby

Thankfully due to the couple of years that I was teaching preschool...I gathered a lot of great children's books. It really has been a nice collection to have now that we have Kaelyn. Even though she's only 8 months old....she absolutely LOVES to be read to and even enjoys turning the pages and looking at the bright and colorful pages. I would have to say her favorites are probably Brown Bear and Five Little Monkeys! It's so fun to watch her as she learns new things every day. I know reading is so important and that's why it's something we do each and every day!

Starting Solid Foods and Water

When Kaelyn began eating solid foods...we were told that it would be a good idea to also introduce her to a little bit of water each day as well. We began preparing by looking at water purifiers and finding one that would suit our needs best. We wanted to make sure that she was getting the purist water possible. Along with that, we also were on the hunt for the different foods we would need to get started. I am making all of her foods, so planning a head of time is key. So far it's all going very well...she's a great eater!

New Camera and Printer

Having Kaelyn I have begun to realize how much we use our camera. So much so, that Scott and i have seriously been discussing getting a new one sometime in the near future. Aside from that though...is the need for a new printer. Sometimes I would rather print off pictures than order them and have to go get them. In looking at printers though...many of them are quite expensive. I guess we'll just have to wait and see if the prices drop or not.

A Second Laptop

Not all that long ago...Scott and I got a new computer. We have a desktop, but when our old laptop went out...we decided to get a new one. We just love it. In fact, we love it so much that we've often discussed getting a second one. There are so many times that we're both sitting in the living room...both needing the computer for one reason or another. A second laptop would definitely make it easier to spend time with one another. Who knows...maybe someday.

Fun Weekend Plans

I think this weekend, Scott and I may take Kaelyn to the Zoo. We'll have to see how the weather is for sure...but it's at least in the plans tentatively. We're both really excited to take her and see her facial expressions and she looks at all the animals. She's very observant and I think she'll really enjoy something like this. We may also be taking her to the local pool tomorrow afternoon if it's nice out. She's swam in her little pool in the backyard...but a big pool will be a new experience. I'm looking forward to it.

Carpet Update

Yesterday we got some good news about our new carpet in the basement. We've been wondering when we're finally going to get it put in...as that will definitely be the biggest change and one that will be the finishing touch on all the work we've done. We got a call yesterday telling us that they can put it in on the 25th! I was a little bummed that it was still a couple weeks away....but I'm sure it will come fast. I'm really excited to have it done.

Time Flies!

Can you believe it's already Thursday? I can't!! Wow!! It doesn't seem like it should already be nearing the end of the week. Time sure does go by when you're busy. First Time Swimming

Tomorrow will be a fun day for Kaelyn. Her Aunt Stacie has some time during the day to spend with her. So, we're going to get out her little pool for the first time and Stacie and Kaelyn will get to swim together. It's supposed to be warm and beautiful...so by the afternoon the water should be warm and Kaelyn should be all rested to go swimming in the backyard with Stacie!! I am going to be sure to get pics of this fun occasion...as it's the very first swimming experience for Kaelyn of any kind.

Great Long Weekend

We sure enjoyed our long weekend! We had the opportunity to take Kaelyn to the parade, to the lake for the first time and best of all had lots of time to spend with family!! Sunday my brother and his family came from Texas with their little boy and it was so neat to see he and Kaelyn playing together. Their little baby talk was the cutest!! I wish that they lived closer so they could play more often. Soon they will live closer and that will happen!! It was such a great weekend....too bad it had to go by so quickly!

Vacation

Recently Scott and I have been talking about taking a little family vacation. When I get time, I have been looking online to see what some of our options are as far as fun places to take kids. Of course there's you're typical Orlando vacations, and not that I'm against something like that some day...but Kaelyn is a little small to be taking that far yet. We're thinking more like a zoo vacation of some sort. We'll have to see what I find I guess.

Happy 4th of July

I hope everyone is having a wonderful 4th of July!! We had a great day...and are finally sitting at home relaxing after being outdoors much of the day!! Kaelyn is sound asleep and Scott and are enjoying the air conditioned house. It was a wonderful day spent with family on the lake. I wish there were more days like this during the summer. It's going to be a great rest of the weekend as well...I can't wait! Lots of pics to come...

First Parade

I am really looking forward to tonight. It will be Kaelyn's first time to a parade. I'm hoping that the weather stays as nice as it's been all day so that we can enjoy ourselves without cold or mosquitoes for that matter. I'm going to try and get a few pictures of her there too...so I'll be posting those after the weekend is over with. I sure hope she likes it. She's usually really attentive in public...just watching everything that's going on.

Do What You Can

Boy do the days fly!! I wake up every day at 7 AM with Kaelyn. Before I know it, it's already supper time! That is how each and every one of my days go...especially during the week when it's just me and Kaelyn at home during the day! I can't believe how fast the time goes. I wish it could slow down just a bit so I felt like I could get more done in a day. Oh well...I guess I just gotta do what I can and there's always tomorrow to finish my to-do list, right?!

Do you have a green thumb??

I was a little bit disappointed to walk out in our yard today and see that many of our plants seem to be lacking water. Scott waters them every day when he gets home from work...rain or shine! I am not one with a green thumb, so I am not quite sure what the problem is. The soil seemed dry...so I watered them again this afternoon. I sure hope that helps...as having a few plants in the landscaping really has helped with the appearance of our home. It's much prettier and so much fun to drive up to. Hopefully these plants and flowers will perk up soon!

Snail Mail

Fun Weekend Ahead

This weekend is going to be GREAT!! We have plans almost every day and I can't wait. Our fun begins tomorrow night with the local parade that we go to every year. It should be pretty fun...I think Kaelyn will really enjoy it as long as the mosquitoes aren't too bad. Friday is the 4th...that day we spend with Scott's family at the lake. I don't think we'll be going to fireworks this year...but that's ok....I think we might be able to see them from our house actually. Saturday my side of the family has a family reunion and then Sunday my brother and his family will be visiting from Texas for a while. I haven't seen them since Christmas, so that should be a good time as well! I guess I'll have lots to talk about after the weekend is over!!

Many Jobs

As a mom you learn to multi-task. This is something I'm learning more about with each day that passes. I've learned to do laundry with one hand, learned to make the bed with one hand...even learned to water the flowers with one hand (something I just did today for the first time!). It's amazing how much you can do with something in one hand and a child in the other! Typically I am not holding Kaelyn when I water flowers, but we were outside enjoying sitting on the swing and I noticed that it really needed to be done. It actually went pretty smoothly....she just watched and enjoyed as the water sprinkled over all the flowers. Such a good little girl!

Where's the rain?

I woke up this morning thinking that the weatherman had said it was supposed to rain. I was actually hoping it would...as our lawn and flowers could use a little more water than they've been getting. However, it's almost 5 and still no rain. Maybe that part of the forecast got changed?! It's actually looking very sunny out still...and quite warm as well. I suppose that's ok...as long as the rain doesn't wander in over the holiday weekend! That wouldn't be fun at all!!

Teething Again

Knowing what I do from the last time Kaelyn got teeth in...it seems as though she's working on some more. Last time it seemed like she was teething forever...so hopefully this time they will pop through a little faster. I feel so bad for her....so helpless...as there's only so much you can do to try and comfort them. Thankfully she is sleeping pretty well during the day and great at night...but she has her times when she just cries because it's hurting her. Poor babies....this teething thing is no fun!

Baby Developmental Milestones

Last month at this time I would never have guessed that by 8 months old Kaelyn would be pulling herself up to a standing position and even trying to take steps along furniture. You just never know what's going to come next with babies...or how soon they will embark on these baby milestones. I think it's really neat to watch. I look back at pictures we've taken over the months and it's crazy to think that only a few months ago she could hardly sit up without support. What's even weirder to think about...is that in only a few short months from now she will probably be walking. Wow...how things change in such a short period of time!!

Baby Sleep Schedules

Kaelyn has set into quite the nice routine. When she was first born she was a great sleeper...only waking up once to feed for the first couple of weeks...then sleeping through the night after that. However, I remember thinking "is she ever going to go to bed earlier than 11:00??" Thankfully I now know the answer was "yes". Over the past 8 months we've gradually worked our way back to an 8:00 bedtime. So far it's going great!! As she gets older she takes fewer naps during the day, which means she's more tired at night. Not only that, but she's so incredibly active, that she's about ready to drop by 7:30. This works out perfectly...because it gives Scott and I the chance to spend some time together and get things done around the house before we go to bed. She sleep until 7:00 am...which is great!! Two, two hour naps during the day and 11 hours at night....I can't complain about that one bit!! She's such a good little girl.....

8 Months Old

Each month I say it...but where does the time go!?! Kaelyn is 8 months old today and it seems like it was just yesterday that we were taking her home from the hospital! She's growing and changing each day and we love the little personality that starting to shine through. She's such a curious and sweet little girl....what a joy she is in our lives!! Before we know it she'll be talking up a storm and walking all over the place....

Where does the time go?

Wow...I was looking at the calendar today and can't believe it's already July!!! Where has the summer gone already? It's almost the 4th of July!! I can't believe how fast time goes. It seems like we were just in winter. Now summer is already almost half over. We really need to enjoy every nice, warm day we have here...because in the midwest you just never know when it's going to get cold again. Unfortunately the cold weather takes up much of our year!
